Lentil Burger

Ingredients

1 cup sweet potato, mashed

400g lentils, rinsed and drained

3 spring onions

1 egg

1/2 cup gluten free breadcrumbs

1tsp cumin powder

1tsp coriander powder

2 clove garlic

Salt and pepper


Method

  1. Place all ingredients in a bowl and combine using your hands.

  2. Roll into balls and press down to make a patty.

  3. Shallow pan fry with a dash of oil in a non stick pan.

Note: These are delicious with a yogurt and cucumber dressing.
