Slow Cooked Lentil Daal

Serves: 3-4 Prep: 10min Cook: 8-12hr


Ingredients

1 cup dried organic red lentils,

1 cup dried organic mung beans

1 cup dried organic brown lentils

1 onion, diced

4 garlic cloves, crushed

1tbsp fresh ginger, finely sliced

1tbsp turmeric powder

1 bay leaf, whole

2tsp ground cumin

1tbsp ground paprika

2tsp ground coriander

400g organic diced tomatoes

6 cups water

400ml coconut milk

Salt and pepper to taste

Method 

  1. Rinse the legumes and add to slow cooker

  2. Add in remaining ingredients and give a good stir

  3. Cook on low setting for 8-12 hours

  4. Serve with quinoa, topped with fresh coriander leaves and/or a sprinkle of black sesame leaves​​

Optional: Lightly sautéed mushrooms in a little ghee, salt and pepper and serve on top of your Lentil Dahl
